Easy Peasy Mac & Squashy!

Weird name, but I think it works hahah! I made an easy peasy recipe for a squash ‘mac & cheese’! This has been all the rage! I personally do not think it tastes like mac & cheese because its hard to replicate a masterpiece with no cheese ahah! BUT this tastes delicious no matter if it tastes like mac & cheese.

This recipe is full proof and you can even mix it all in the same bowl AND even eat in the same bowl! I don’t judge! Without further ado here is the recipe!

INGREDIENTS:

1/2 cup of puréed pumpkin or any type of squash
1/4 cup plus 2 tablespoons of coconut milk
2 tablespoons of nutritional yeast
splash of thyme
salt, pepper, garlic powder to taste

DIRECTIONS:

1. Combine all ingredients with a spoon or a blender whatever your heart desires!
2. Then add in a third of a box of cooked banza pasta.
